CHEF LASZLO SZALAI: Good evening and welcome to Expert Village. I am Laszlo Szalai, the
chef of Citadella Restaurant. Our restaurant is situated in Budapest, Hungary. I usually add an apple too. We chop this also
up and place the slices next to the duck leg. There is one thing left and that is to pour
some oil on
it. After, I add water. And now we can place the baking dish into the oven and we bake
it at 150 Celsius degree for an hour. Before we cover it with foil, we place it into the
oven for one hour and meanwhile, we can prepare the side dish that is smashed potatoes with
onion. Let's prepare smashed potatoes with onion. We cooked the potatoes in the cauldron
earlier. Now, we peel them. Fortunately, they cooled down already so it is easier to peel
them.
Now we chop up the onion and this is one of the most important parts of our dish. We chop
it up finely.
After we fry the diced onion golden yellow, we mix it with the meat of the duck.
