Christmas Pudding Recipe : Creaming Butter to Make Christmas Pudding

Hi, my name is Brandon Sarkis on behalf of Expert Village. Today I'm going to be showing
you how to make holiday pudding. Okay, now we're going to do what's referred to as creaming
our butter. So we're going to take our sugar, put it at the bottom of our bowl. We're going
to take our butter, and you can let your butter get you know, kind of soft, not melted, that
wouldn't work, but softened. But all we're going to do, we're just going to do this,
and turn this on, and let it do its thing. And what's going to happen here is the graduals
in the sugar are going to start to basically grind away and break down the butter, and
it's going to irate the mixture as well. So it's kind of like adding an abrasive element
in there. So once it gets going you can kind of turn the speed up a little bit, and you
can see how it's forming little balls. And you'll notice that when we're done here it's
going to have a really light fluffy texture to it. Another thing, you can see how it's
starting to take on that texture right now, but what we're going to do real quick is we're
going to step in and just scrape down our bowl and make sure we get everything all mixed
together nice and evenly. Now another thing to remember is that if you let this go for
too long, it will generate a lot of heat and start melting your butter, and that's not
what you want to do. So just until you see it get mixed together which in all honesty
is right about now. We're all finished. Now see if you had done this by hand it would
have taken you a ridiculous amount of time. This would have taken you like ten minutes
probably. So you can see now the texture of our butter and sugar mixture looks more like
icing actually, or like frosting. It's really kind of pasty and kind of mixed together.
That's exactly what we're looking for. So we are done with step one.
