Today we will make maida papdi.
Serve maida papdi in breakfast or during supper.
Let's see what all ingredients are required for making maida papdi.
Maida - 1 cup
Salt - as per taste (1/4 tsp)
Carom seeds - 1/4 tsp
Maida - for frying papdi and kneading dough
Firstly knead maida.
Add maida in a bowl.
Add salt and carom seeds.
Also add oil in the dough.For 100 grams maida add 25 grams maida.
Mix all ingredients nicely.
After mixing all ingredients knead a hard dough with help of water.
Add little water at a time for kneading dough.
Don't add water at once as maida can get thin.
Keep kneading the dough like this for 3- 4 minutes so that it gets soft.
Dough is ready,now keep it aside for 20 minutes for fermenting after covering it nicely.
After 20 minutes knead the dough again and make maida papdi from it.
Make balls accordingly.
We are making medium size papdi.
Roll the balls and flatten them with your hands.
Now roll the papdi very thinly like this.
Papdi is ready,now fold it quarterly and again fold it like this.
Give two fold and prepare a papdi in this shape.
Like wise fry all papdi and then fry them.
Check whether oil is hot or not.
Now fry papdi.
Now gently place papdi one by one in the pan.
Fry them on low flame only.
Add as many papdi as possible in the pan.
Keep tossing the papdi once they turn brown.
Fry on low flame until they turn golden brown in color.
Papdi have become little brown,fry for 2 minutes more.
Take out papdi when gets brown in color from both sides.
Golden brown and very cripsy maida papdi is ready.
Serve maida papdi in breakfast or whenever you feel like eating it.
It can be stored for 2 weeks or 20 days.
