Today we will make dry tinda(roundgourd) sabzi.
Let's see what all ingredients are required for making tinda sabzi.
Roundgourds - 1/2 kg (500 grams)
Cumin seeds - 1/2 tsp
Asafoetida - 1-2 pinch
Turmeric powder - 1/2 tsp
Red chilly powder - less then 1/4 tsp
Mango powder - 1/4 tsp
Salt - as per taste (1 tsp)
Ginger - 1 tsp (paste)
Garam masala - less then 1/4 tsp
Coriander powder - 1 tsp
Green chilly - 2 (finely chopped)
Fennel powder -1 tsp
Green coriander - 1 tbsp
Peel the gourds with help of peeler like this.
Avoid buying gourds which are too green in color as they are intoxicated.
Now cut the gourds.
Make 4-5 pieces of one gourd like this.
Now cook gourds.
For this take 1 tbsp oil in a pan.
Now add asafoetida and cumin seeds in the oil.
Add turmeric powder,green chilly,ginger and coriander powder.
Now add gourd pieces and mix until they get coated with spices nicely.
Also add fennel powder and salt.
Mix spices in gourds like this.
Saute like this for 2-3 minutes.
Add red chilly powder as per your taste.
Now add 1 tbsp water in the sabzi.
Cover the pan and cook on low flame for 5-6 minutes.
Always cook sabzi on low flame so that it comes out very delicious and delectable.
While cooking sabzi on high flame makes water evaporate faster leaving sabzi uncooked.
Check sabzi and stir with spoon so that all spices settled at the bottom gets mixed up again.
Now cook the sabzi for 2-3 minutes more on low flame.
Sabzi is ready,now add rest of the ingredients.
Add mango powder and garam masala powder in the sabzi.
Also mix green coriander leaves.
Dry tinda sabzi or tinda fry is ready.
We have used 500 grams roundgourds for making sabzi.
This much amount of sabzi can be served to four family members.
Serve with chapatti,parantha or rice.
