Chinese red cooked pork belly (hung siu yuk) 紅燒肉

Today I teach chinese red cooked pork belly
around 560 grams pork belly
clean the skin with a knife
remove hair
rinse and drain, dry up the pork
removed the rib bone
cut it like this
cut off this piece of meat
cut it separate
turn it upside down, cut into bite - sized chunks
cut it like this, repeat the process for the rest
3 slices of ginger
I use a large spring onion if you use small ones take two
separate white and green parts
stomp the white part and cut it
cut the green parts the same size
hot pan, put the pork in the pan
fry the pork from 4 sides
each side around 1 to 2 mins
don't fry the rind
repeat the process for the rest
after the pork turns brown, put in 3 slices ginger
put in white parts of green onion to saute well
after green onion and ginger are sauted
lay the pork on the green onion and ginger
turn to medium heat
put in 1 tbsp Chinkiang vinegar
3 tbsp Shaoxing wine
2 tbsp washed rock sugar,1 tbsp light soy sauce
1 tsp Lee kum kee premium dark soy sauce
2/3 tsp chicken powder, stir well
flip around the pork chunks to another side
the pork took color from the sauces
add 200 ml water, bring to boil
after it boils, turn to very low heat
cover with lid, simmer for about 30 mins
after 30 mins
I flip around all the pork to another side
continue low heat
simmer for 15 mins, cover with lid
after 15 mins
flip around all the pork to another side again
simmer for 15 mins again , cover with lid
after 15 mins
flip around all the pork to another side again
all together I simmer it 3 times for 15 minutes
boil up some water
put in some sugar
some chicken powder and oil
put in some washed lettuce
as soon as the water boils, take out the lettuce
drain the lettuce
after the last 15 mins
put in the green parts of green onion
turn on high heat, stir it
after stirring well
put the roast pork on plate with cooked luttuce
