Hi and welcome back to Najat's kitchen
Today I will be making an Egyptian dish called Kushari
The ingredients are:
1 cup of jasmine rice
or you can use Egyptian rice
3/4 cup green lentils
1/4 cup elbow pasta
1/4 cup any kind of small pasta of your choice
or you can use all elbow pasta
1/4 cup Vermicelli
for the sauce:
2 cups tomato juice
or 1 cup of tomato sauce diluted with one cup of water
one small onion (finely diced)
3 large garlic cloves(mashed)
2 tablespoons white vinegar
1/4 teaspoon ground cumin
1/4 teaspoon black pepper
salt to taste
1/4 teaspoon hot sauce(or to taste)
For garnish:
2 large onions(thinly sliced)
First,I will fry the onions for garnish
In a skillet,over medium-high heat,fry the onions
until dark brown and crispy
Drain the onions and put them on paper towel
Reserve the oil
To cook the rice:
Over medium-high heat,fry the Vermicelli
with 3 tablespoons of the reserved oil,until golden brown
Add the rice that has been washed several times and soaked in warm water then drain
stir until the rice is coated with oil
Add 1 1/2 cups of boiling water and 1/2 teaspoon salt
cook the rice ,covered, for 5 minutes
lower the heat to low and cook for 20 minutes
To prepare the sauce:
Over medium heat,saute the diced onion,using 1 tablespoon of the reserved oil, until golden
Add the tomato juice and bring to a boil
Simmer,uncovered for 20 minutes
Fluff the rice with a fork and keep it warm
Cover the lentils with about 1 inch of cold water
Add 1/2 teaspoon of salt and cook over medium heat until done(about 20 minutes)
Drain the lentils and keep warm
When the sauce has thickened,add the mashed garlic,white vinegar
cumin,peppers and justify the salt.
Cook the pasta in 1 litre of boiling water
I added 2 teaspoons of salt and 1 teaspoon of the reserved oil
Stir and cook until done (14 minutes)
Drain the pasta and wash it with cold water
this will prevent the pasta from sticking and will stop the cooking
To assemble the dish:
In a serving pasta bowl,serve some rice ,pasta,lentils
You can do layers of them
Ladle some tomato sauce
garnish with fried onions and chickpeas
Serve hot
