How to Make King Cake

King Cake is best known as bright, ring shaped bread from New Orleans.
Traditionally, it's baked with a small trinket hidden inside,
bringing luck for the finder.
Its festive sprinkles are the colors of Mardi Gras.
First, in a large bowl, you'll need to dissolve the yeast
and white sugar in warm milk.
Let the mixture stand until creamy, about 10 minutes.
Next, stir the egg yolks and melted butter into the milk mixture,
and then set it aside.
In a separate bowl, combine a flour, salt,
and lemon zest.
Pour your flour mixture into the milk, egg mixture; one cup at a time.
Beat with wooden spoon, until it forms into dough.
On a lightly floured surface,
knead the dough for about 8 minutes, or until it's smooth.
Lightly oil a large bowl.
Place the dough inside, and turn it, so it gets a coating of oil.
Cover the ball with a damp cloth, and let it rise in a warm place
until it doubles in volume.
That should take about 2 hours.
Meanwhile mix the cream cheese, and half a cup confectioners sugar
for your filling.
In another small bowl, for your glaze,
combine the remaining 2 cups of confectioners sugar,
lemon juice,
and 2 tablespoons of milk.
Make sure you mix well, and set aside.
Once the dough rises for 2 hours, roll it out onto a 6 by 30 inch rectangle.
Spread the cream cheese filling across the center.
Next, you'll need to bring the 2 long .edges together,
and seal completely.
Shape the dough into a long cylinder,
and place it on a greased baking sheet, seam side down.
Bend the dough into a ring.
Press the lucky charm into the dough from the bottom,
that way it's completely hidden.
Place a well greased, 2 pound, metal coffee can in the center of the ring.
So it maintains its shape during baking.
Cover the ring with a towel, and set in a warm place to rise again.
After 45 minutes, it should double in size.
Make sure your oven is preheated to 350 degrees Fahrenheit.
Bake in preheated oven until golden brown.
About 30 minutes.
Remove the coffee can, and allow the bread to cool.
Once the cake has cooled, drizzle a lemon and sugar glaze,
and decorate with candy sprinkles.
Yellow, green, and purple are Mardi Gras colors.
