Today we will make besan barfi.
Besan barfi is very tasty in eating and moreover it is very easy to make it. It takes very little time to besan barfi.
Let’s see what ingredients are required to make besan barfi.
Besan (gram flour) - 2 cup
Sugar - 1 cup
Ghee - 1 cup
Cashew nuts - 2 tbsp
Milk - ¼ cup
Cardamom - 4
Pistachio - 1 tbsp
To make besan barfi firstly, roast the besan. Before roasting the besan add 3-4 tbsp ghee and milk in it. Mix them well.
Mix it with your hands.
Place the besan in the plate and rub it between your hands like this to make it Coarse.
After making it coarse, strain the mixture in a sieve with thick wires so that mixture becomes even.
Place the sieve on top a bowl and strain the besan like this.
Now roast the besan. Turn the gas on, put ghee in the pan and add besan.
Roast the besan by stirring it continuously till it becomes golden brown.
Keep the flame to medium and continuously roast the besan like this.
Make sure besan do not stick to pan.
Besan is roasted and smells good. Ghee has also started separating from the besan.
Turn off the flame and take out the besan in a plate.
Now we will make sugar syrup in the pan. Add sugar in the pan and put ½ cup water in the pan. For 1 cup sugar use ½ cup of water.
Meanwhile cut the dry fruits. Make 7-8 pieces of a cashew nut and thinly slice the pistachios. Make powder out of cardamom.
Sugar has melted in the water and we need two thread syrup.
Cook the sugar syrup for 3-4 minutes more.
Check whether the syrup is ready or not.
Take drop of syrup in a bowl and with help of your thumb and fore finger check whether the syrup is of two thread consistency or not.
Sugar syrup is ready; now add besan in the syrup.
Flame is kept to minimum, mix the besan and cashew nuts and cardamom powder. Cook for 2-3 minutes on medium flame.
The mixture has become quit thick. Cook it till it forms one lump in the centre.
Now we will set the mixture. Grease a plate or tray with ghee and place the besan mixture in the tray.
Sprinkle pistachios on surface of the mixture. Press them with a spoon so that they stick to the mixture well.
Now place the barfi for setting and once it gets sets cut it in to pieces.
Besan barfi is set and is ready. It took 1 hour to freeze it.
Now cut the pieces. Keep whatever size and shape you want.
We have cut the barfi in medium size. Now take them out in a plate.
Very delicious and very nice besan barfi is made.
Cook it for any festival or whenever you want, prepare and store it. It can be stored up to 15-20 days.
