How-To Make Home-Made Carrot Pickle By Archana

Today I am going to show you how to make carrot pickle.
The first thing that comes to anyone's mind when thinking of carrots is either salad or halwa.
But to know how this carrot pickle is made differently, keep watching Archana's Rasoi!
For this recipe, I won't tell you how many it will serve because this is a pickle which you can have along with your food for a different flavour.
And you can make this not only with carrots but with vegetables such as brinjal or finely chopped cabbage.
You can use this pickle for a number of days, however it must be refrigerated, so let's have a look at the ingredients.
The ingredients are 2 tbsp oil, 3 finely chopped carrots, 1/2 lime juice, 1 tsp mustard seed powder, 1/4 tsp asafoetida.
1/2 tsp turmeric powder, 1 tsp mix masala, 1 tsp mustard seeds and salt according to taste.
Now I will start making the pickle.
I will start with creating the seasoning for the pickle.
I am going heat 2 tbsp (or slightly more) oil.
The oil is hot, I am adding 1/4 tsp asafoetida.
Now I am adding 1 tsp mustard powder and 1 tsp mustard seed.
Once the oil was heated, I added asafoetida, mustard seed powder and mustard seeds. Now I will add turmeric powder and mix masala.
I am adding 1/2 tsp turmeric powder and 1 tsp mix masala. Mix the seasoning well.
The seasoning is ready, I am turning off the gas.
Avoid leaving the seasoning on the gas for a long time as it will turn black. The colour of the seasoning should remain red.
Now, put the chopped carrots in a bowl.
Pour the seasoning on the carrots.
I have poured all the seasoning on the carrots. I am now going to add salt and lime juice.
I am adding 1/2 lime juice.
Mix all the ingredients well.
The carrot pickle is ready to serve.
Incase you have nothing tasty at home to eat and you do have vegetables in the house, you can go ahead and make this seasoning and pour it over the vegetable.
