Red bean, green bean mini Zong / Zongzi, 紅豆或綠豆仁迷你鹹肉粽 Dragon Boat Festival

Today I teach mini red bead, green bean zong/ zongzi
soak 9 bamboo leaves overnight
dry washed leaves with cloth
in order to wrap it easier later
cut the top and bottom ends
3 pork belly stripes = 40 grams
1 tsp shaoxing wine, 1 tsp light soy sauce
1/2 tsp 5-spice powder, stir well put in fridge overnight
soak 2 tsp red beans overnight, drain them
a pinch of sugar, salt and 1/2 tsp oil, stir well
soak 100 grams glutinous rice for 6 hours, drain it
1/2 tsp chicken powder, a pinch of sugar
1 1/2 tsp oil, stir well
soak 4 tsp peeled split mung beans (green bean), drain them
a pinch of sugar, salt and 1/2 tsp oil, stir well
slice ginger, cut 1 white part of spring onion
3 chinese mushrooms, soaked and drained
cut each into 4 pieces
1/2 tsp light soy sauce, 1/2 tsp shaoxing wine 1/3 tsp chicken powder
1 tsp water from soaking the mushrooms
1 tsp oil in hot pan, saute ginger, white part spring onion
add chinese mushrooms fry together
when chinese mushrooms are done, turn off the heat
take out ginger and white part of spring onion
put in the seasoning
fry til seasoning is nearly evaporated, leave to chill
divide glutinous rice into 3 portions
mix 1 portion with red beans
top part facing away the other leaf on top in reverse way
distance 1 finger, fold like this to a bag
put half of red bean rice in and press down
2 dices chinese mushrooms
1 pork belly stripe, another 2 dices mushrooms
half salty egg yolk and the rest of red bean rice
use spoon press together
add another leaf, top part on right and fold like this
press filling together and fold it to triangle form
tie it up with rope
green bean Zong
do the same like before, fold it to a bag
some glutinous rice
some green beans
2 dices chinese mushrooms, 1 pork belly stripe
2 more dices chinese mushrooms
half salty egg yolk and some more green bean on top
some more rice and press together
use spoon press together add another leaf
fold it like this to triangle form
tie it up with rope
put Zong into boiling water
boil up, turn to medium low heat
cook for 2 hours, add boiling water if neccessary
cover with lid
after 2 hours, turn off the heat
leave on the hob for 15 mins then remove and drain
mini Zongs are done, serve with sugar, or dark soy sauce
I like light soy sauce with chilli sauce
