Today we will make gatte ki sabzi.
This sabzi is prepared in rajasthan the most.
But due to its unique flavor it is liked by everyone.
Let's see what all ingredients are required for making gatte sabzi.
These are required for making gatte and these are required for making
For making gatte we need:
Gram flour - 1.5 cup(200 grams approx)
Curd - 2 tbsp
Oil - 1 tbsp
Salt - as per taste(1/2 tsp)
Baking soda - 1 pinch
For making gravy we need:
Paste - 3-4 tomatoes,2 green chilly,1 inch ginger piece
Curd - 1/2 cup
Cumin seeds - 1/2 tsp
Asafoetida - 1 pinch
Coriander powder - 1 tsp
Salt - as per taste (1 tsp)
Turmeric powder - 1/2 tsp
Garam masala powder - less then 1/4 tsp
Red chilly powder - less then 1/4 tsp
Green coriander - 1 tbsp (finely chopped)
Malai or cream - 2 tbsp
Oil - for making sabzi
Let's knead gram flour for making gatte.
Take gram flour in a bowl and add curd,salt,1 pinch soda and some oil.
Mix all ingredients nicely.
Dough is ready;keep it aside for 10 minutes for fermenting.
After 10 minutes start making gatte from the dough.
Take water in a utensil and place it on flame for boiling.
Meanwhile make gatte.
Roll it like this with your hands and keep it 1/2 cm thick.
Divide into half.
Now place it on a plate.
Gatte are ready,now add them in boiling water.
Add gatte in boiling water only else they may get dissolved in water.
Water has started boiling now add gatte into it.
Take enough water so that gatte get drenched in it nicely.
It takes 12-15 minutes for boiling gatte.
Meanwhile make gravy.
Add cumin seeds in hot oil.
When cumin seeds get little brown add turmeric powder,coriander powder and tomato-green chilly paste.
Cook masala until oil starts floating on the surface.
Also add red chilly powder.
Keep stirring after every 1-2 minutes.
It takes 4-5 minutes for sauting the masala.
Now add malai into it.
After sauting for 2 minutes add curd in the masala.
Stir constantly with help of a spoon.
Don't stop stirring as curd may coagulate.
Keep stirring constantly until gravy starts boiling and masala gets cooked completely.
Masala is ready, now add water as per your preference.
Add 1-2 cup of water in the masala.
After gravy starts boiling add gatte pieces into it.
Meanwhile cut gatte pieces.
Gravy has started boiling now add salt in it.
Now add gatte pieces.
Also add garam masala and cook sabzi for 2 minutes after covering it.
Sabzi is ready now add coriander leaves in the sabzi.
Always add coriander leaves in the last so that its taste stays for long.
Luscious and mouth drooling gatte sabzi is ready.
We have used 1.5 cup gram flour for making gatte ki sabzi.
This much amount of sabzi can be served to 4-5 family members.
Serve gatte sabzi with chapatti,parantha,naan or rice.
