Today we will make samosa.
Let's see what all ingredients are required for making samosa.
Maida - 2.5 cup (250 grams)
Potato - 3 (250-300 grams approx)
Green peas - 2 tbsp
Salt - more then 1/2 tsp (as per taste)
Cumin seeds - 1/2 tsp (roasted)
Asafoetida - 1 pinch
Coriander powder - 1 tsp
Red chilly powder - less then 1/4 tsp
Mango powder - 1/4 tsp
Garam masala - less then 1/4 tsp
Ginger - 1/2 inch piece (grated)
Green chilly - 1 (finely chopped)
Green coriander - 1 tbsp (finely chopped)
Oil - for kneading dough and frying
Firstly knead dough.The dough is kept hard like that of dough used for making puris.
Add salt and oil in the maida.
For 250 grams or 2.5 cup of maida add around 60 grams or 3 tbsp of oil in the flour.
Mix it really well.
After mixing knead the flour.
Knead the flour by adding little amount of water at one time.
Avoid adding large amount of water at a time because this could make your dough thin.
Keep the dough aside for about 20-25 minutes so that it gets fermented.
Let's prepare the stuffing for the samosas.
For this; peel the boiled potatoes and mash them finely.
Now add salt,coriander powder,green chilly,ginger,boiled peas,garam masala,mango powder and red chilly.
Mix all ingredients really well.
Stuffing for filling in samosas is now ready.
The dough as well as stuffing is ready. Now let's start making the samosas.
Take little amount of dough equal to the size of lemon and give it a round shape.
Roll it in a circle with 6-7 inch diameter.
Now divide it in two equal halves with help of a knife.
Take one part in your hand and grease the edges with some water.
Paste the water greased edge giving it a corn like shape.
Now stuff this cone with the prepared filling.
Grease the top edge with little amount of water like this.
Give a fold at below side or back side of the samosa like this.
Join the ends or edge hardly so that the stuffing doesn't pops out.
Samosa i s ready.
Gently place the samosas in the kadai.
Fry the samosas on low flame until they get golden brown color
Fry as much samosas as possible at one time.
We have used potatoes for filling but there are numerous of ways for making stuffing.
Like you can use dal, paneer or any other thing you like eating.
Sweet samosas can be prepared with mawa.
Stuff the samosas with mawa and dry fruits filling and dip in sugar syrup.
Sweet samosas will be ready.
It takes time for frying the samosas because the flame is kept to minimum.
Samosas get crunchier on low flame.
It takes 5-6 minutes for frying samosas of one time.
Take out fried samosas in a basket with absorbent paper.
Golden brown and crunchy samosas are ready.
Steaming hot and golden brown samosas are ready.
Serve with green coriander chutney or sweet chutney.
