Hi and welcome back to my kitchen
I will show how to make Apple Turnovers
I will need:
3 tart firm apples
½ cup brown sugar
1 egg+1 table spoon milk +1/4 teaspoon vanilla extract
2 table spoons white sugar+1/2 teaspoon cinnamon
2 table spoon butter
½ teaspoon cinnamon
Pinch of salt
2 table spoons fresh orange juice
½ teaspoon orange zest
1 table spoon corn starch
Puff pastry (400 gm)
For the filling:
Peel the apples and cut them in 3/4-inch dice.
In a large skillet set over a medium-high heat, add the butter and melt.
Place the apples and cook for 5 minutes.
While the apples are cooking, make slurry out of the cornstarch and orange juice and zest
Add cinnamon and salt
Add the sugar and cook for 2 minutes more.
Adjust sugar amount to your taste
Add the starch mixture
You can add raisins, dried cranberries, cherries in this stage
Continue to cook for 1 minute and remove from the heat.
Place the apples aside to cool.
Preheat the oven to 400 degrees
Flour a board and lightly roll each sheet of puff pastry to a 12 by 12-inch square. Cut each sheet into 4 smaller squares
Brush the edges of each square with the egg wash
Neatly place about 1 ½ table spoon of the apple mixture on half of the square.
Fold the pastry diagonally over the apple mixture and seal by pressing the edges with a fork.
Transfer to a sheet pan lined with parchment paper.
Brush the top with egg wash, sprinkle with sugar-cinnamon mixture
Make 3 small slits, and bake for 20 minutes or until browned and puffed.
Serve warm or at room temperature with a scoop of vanilla ice cream.
