mango pudding 芒果布甸

Today I teach mango pudding
wash and cut a mango, around 290 grams
use a big spoon scraping the fruit out
cut out 21 small dices, set aside
scrape off the fruit flesh with big spoon
puree fruit pulp
9 grams white gelatine add 75 ml milk
stir well, wait for 10 mins
10 mins later, add 100 ml milk
because my mango is not too sweet, add 30 grams sugar
turn on medium low heat cook for 4 mins
4 mins later, the gelatine is dissolved, turn off the heat
set aside to chill
beat 50 grams fresh cream for 1 min
1 min later, add 2 1/2 tsp vanilla sugar, beat 1 min more
put the fresh cream mixture in pureed mango, mix well
after all is mixed together, put into dissolved gelatine
put it back into cup for easz processing
stir it well
put 3 mango dices into moulds
fill the moulds around 80 % with mango mixture
cover with plastic wrap
put it in fridge for 3 to 4 hours
4 hours later, put the pudding in hot water for 1 min
