Cantonese white cut chicken, 蒸白切雞

Today I teach white cut chicken
wash and clean a chicken
dry it up with paper
dry the inside as well
rub the chicken with 2 tsp salt
3 tsp shaoxing wine and 1 tsp ground ginger
soaked for 10 mins
squeeze out wine and ginger juice
rub the chicken with it
put the rest in the chicken
rub 1/2 tsp salt in the chicken afterwards
after I rubbed the wine and ginger juice on
now I rub 1/2 tsp salt inside the chicken
wash 3 spring onions, cut off the white part and stomp it
stuff the white parts in the chicken
a stomped piece of ginger and the ground ginger
lay green spring onion parts on the steaming plate
place the chicken on top, cover with plastic wrap
put in fridge for 5 hours or over night
take chicken out of fridge 1 hour before processing
use a paper to absorb the water from plate
brush 1 tsp oil on aluminium foil
cover up the chicken
fill water in the steamer
place a small rack on the steamer bottom
place the chicken on the rack
cover with a lid
turn on high heat to boil the water
when water boils, steam it for around 45 - 50 mins
40 mins later, look under aluminium foil
stick chop stick in chicken leg, of it is done
it will come out without blood
cover with lid, turn off the heat
leave on the hob for 10 mins. Take out to chill 15 mins
after cooling 15 mins
place the chicken to new plate with chop stick
3 tsp shao xing wine
2/3 tsp salt
brush all over
use a second plate and flip the chicken around
take out the spring onion, ginger and pour out water
brush rest of wine all over the chicken
rest of salt
leave to chill completely then cut it
after chilling, first cut the wings
now cut the legs
divide the leg
cut out the chicken front and backside
cut the backside first
cut the chicken breast
cut it like this
cook ginger and spring onion sauce
2 tbsp oil
turn on medium heat
1 tsp ground ginger
fry it
saute ginger
pinch of sugar, 1/3 tsp salt, pinch of pepper
some spring onions, fry for 1 min
2 tsp oyster sauce, 1/2 tsp light soy sauce
1 tsp cold water, mix to gether
brush some sesame oil on the chicken
some slices spring onion
