Cooking Tips : How to Make Fresh Tortellini

To make tortellini you want to first start off with a sheet of pasta dough. Here I have
a little one and what I want to do is I want to make a little square. So I am going to
trim this guy down here. And again you want a perfect little square if possible. And I
am going to take just a little bit of filling. You want to be very careful not to put too
much filling or it will come out of the tortellini. So just a little bit of filling. I would say
about a half a teaspoon. Once you have your filling in the tortellini you are going to
take your egg wash and egg wash the edges so that they stick together. Now I am going to fold one corner over so
that it makes a little triangle and gently seal the edges. Also I want to make sure that
I don't get any extra air into the tortellini. That will help keep it from busting open.
You see if a little bit comes out that is okay, just set it off to the side. And once
your tortellini is nice and sealed go ahead and lift them up and we are going to wrap
them around your pinkie finger. So all you are going to do is you are going to wrap one
end here, hold it with your thumb, wrap the other end here, and now you are going to press
it with your thumb. Press it together. Now you have this little kind of cone hat and
you are just going to flip him down and slide it off of your finger. And that is how you
make tortellini.
