Oaxacan Meatballs in Chipotle Sauce
Hi and welcome to The Flavor of My Kitchen
on this occasion we are going to make Oaxacan Meatballs
which means in Chipotle and
tomato sauce,

We are going to make the sauce for the meatballs
I am going to use roasted tomatoes.
I made this on the toaster oven
for about 20 min
on the broil setting
in "English" is broil
you may also do them on a dry skillet or
on the open flame over the stove.
but is much more easier like this
so they don't burn

where you season your sauce.
I am going to season it with dehydrated chicken stock
but you may also do this with salt,
I personally think it tastes better
with chicken stock.

now that we have the tomato and chipotle ready,
I'm going to sauté
using a pot, add about 1 - 2
tablespoon of oil

In this sauce you are going to

so make sure is really liquidly.
Now I'm going to let it
come to a boil.
Meanwhile... I'm gonna semi cook the rice.

to the meatballs
its going to help it
stay together and fluff it up
so the meatball is not dense
