Today we will make kaddu puri.
It is a puri but tastes completely like a kachori.
Let's see what all ingredients are required for making kaddu puri.
Wheat flour - 3 cup
Gram flour - 3/4 cup
Pumpkin - 1/2 kg (grated)
Carom seeds - 1/2 tsp
Salt - 1/2 tsp (as per taste)
Oil - 1 tbsp (for mixing in flour)
Knead dough for making pumpkin puri.
Add gram flour,salt and carom seeds in the flour.
Also add 1 tbsp oil in the flour.
Now mix grated pumpkin as well.
Mix all ingredients nicely.
Keep the dough hard like that of used for making plain puri.
Add little water at a time and knead dough.
Dough is ready now keep it aside for 15-20 minutes for fermenting.
Now make small balls from dough.
Grease your hands with some oil and make small balls.
Roll the balls giving them a round shape.
Meanwhile take oil in a pan and place it on flame for heating.
Now start rolling the puri's.
Spread some oil on the rolling plate.
Check whether oil is hot or not.For this place a small piece of dough and see whether it floats on the surface or not.
Oil is hot,now place puri in pan for frying.
Press it slightly with help of a ladle so that it becomes puffy.
Meanwhile roll rest of the puri's.
Flip and fry until it turns little brown in color.
Puri has become brown take it out in basket.
Fry puri on medium flame.
If fried on high flame they may get burend and if fried on low they will not get puffy.
Like wise fry all puri's.
Crusty and crunchy pumpkin puri is ready.
Serve kaddu puri with aloo tamatar sabzi,matar aloo sabzi or raita.
