Glorious Raw Cream Cake with Sour Cherries - Ligia's Kitchen

Last week we made a delicious salad with raw mayo. This week we'll make something special:
a raw whipped cream cake with frozen sour cherries.
We'll need half a vanilla pod, cut into little pieces, 2 tbsp of natural sweetener, a glass of water with lemon juice,
2 cups of cashews (pre-soaked), 1/4 of a coconut, cut into smaller pieces, and 2 cups of frozen sour cherries.
Let's cut the half a vanilla pod into smaller pieces.
Let's add all of the ingredients into the blender, with the exception of the frozen sour cherries.
The lemon juice, the glass of water, the cashews, the coconut pieces, and the vanilla pieces.
Let's mix them up with the tamper.
Now let's pour the mix into a culinary ring.
Let's add the frozen sour cherries into the mix. They'll slowly sink to the bottom.
Isn't the color contrast wonderful!
When we'll cut the cake into slices, the sour cherries will look wonderful.
If it seems like there are enough sour cherries in the cake, you can stop. You don't have to add them all.
Let's press them into the mix with a spatula or a spoon.
Let's add a few more.
Now let's put the cake into the freezer for about 1 hour.
After 1 hour, the cake will look like this.
I'll open the ring and show you what it looks like (if I can manage it...)
I cut a few kiwi slices, which I'll add to the middle of the cake.
