Today we will make noodles samosa.
These are also known as Chinese samosa.
The stuffing is prepared with vegetables and this Indo-Chinese samosa is a favorite street food.
Kids love eating this samosa.
Let's see what all ingredients are required for making noodles samosa.
Maida - 1 cup
Carom seeds - less then ¼ tsp
Salt - ¼ tsp or as per taste
Ghee - 2 tbsp
These are required for making dough.
Ingredients required for stuffing:
Noodles - 1 cup (boiled)
For boiling noodles take enough water in a pan so that noodles get soaked properly.
When water starts boiling add 1 tsp oil and noodles into it.
Boil until noodles become soft and then strain the water with help of a sieve.
Pour some cold water for washing them.
Mushroom - 2 (finely chopped)
Carrot - ¼ cup (finely chopped)
Green peas - ¼ cup
Green coriander - 2 tbsp
Salt - ¼ tsp or as per taste
Black pepper powder - ¼ tsp
Red chilly powder - less then ¼ tsp
Lemon juice - 1 tsp
Soya sauce - ½ tsp
Green chilly - 1 (finely chopped)
Ginger - ½ inch piece (grated) (½ tsp paste)
Oil - for frying samosas and for preparing stuffing
Prepare dough for making samosa first.
Add salt, carom seeds, ghee and mix nicely.
Add little water at a time and knead hard dough for making samosas.
Dough is ready and for kneading this much quantity of water we have used more then ¼ cup of water.
Cover the dough and keep it aside for 20 minutes for fermenting.
Meanwhile prepare stuffing for the samosas.
Preheat pan and add 2 tbsp oil in it.
When oil gets hot add ginger, green chilies, peas, carrot and sauté for 2 minutes.
Also add mushrooms and sauté for 1 minute.
Add salt, red chilly powder, black pepper powder, lemon juice, soya sauce and green coriander powder.
Mix all ingredients nicely.
Now also add boiled noodles.
Cook until all ingredients blend into each other.
Stuffing is ready,now turn off the gas.
Knead dough again to make it softer.
Divide the dough into small balls.
Roll the balls like this.
Take one ball and roll it thinly.
Roll the poori in oval shape instead of round shape.
Now divide the dough into two equal parts.
Take one part and place it on hand like this.
Put some water on the edges with help of finger.
Now take one corner and paste it like this giving it a shape of cone.
Cone is ready.
Place stuffing in the cone.
Don't fill the samosa till the top.
Now put some water all around like this with help of your finger.
Give a plate or fold like this at the back side of samosa to give it a nice shape.
Stick the samosa now from top.
Samosa is ready.
Like wise make all samosas.
Check whether oil in hot or not.
Oil should be medium hot and fry samosas on medium flame until they turn golden brown in color.
Place samosas in oil gently.
Meanwhile make rest of the samosas.
When they float on the surface flip the side.
Samaosa have become golden brown now take them out.
If samosas are fried on high flame then they may become soft.
Fry on medium and low flame, samosas will come out crispy and crunchy.
Now take them out in a plate.
For frying samosas at one time it takes 8-10 minutes.
LIke wise fry rest of the samosas.
Noodles samosas are ready.
We have used mushrooms, carrot and green peas but you can use any vegetables of your preference like capsicum, cabbage or beans.
Serve with tomato sauce or green coriander chutney.
