Today we will make chole masala.
Let's see what all ingredeints are required for making chole masala.
Kabuli chana - 250 grams (soaked for 8-10 hours)
Baking soda- 1/2 tsp
Paneer - 100 grams (chunks)
Paste - 5-6 tomatoes,2 green chilly and 1 inch ginger piece
Cumin seeds - 1/2 tsp
Coriander powder - 1.5 tsp
Pomegranate seeds - 1 tsp
Salt - 1 tsp
Green chilly - 2 (cut lengthwise)
Garam masala - 1/4 tsp
Ginger - 1 inch piece (sliced thinly)
Tea bag - 2
Oil - for making chole
Add enough water in pressure cooker so that chanas get drenched completely.
Also add tea bag in cooker for giving black color to the chanas as it is liked the most.
Cover the cooker with help of lid.
Turn on the gas and cook chanas on low flame for 3-4 minutes after it simmers for once.
Pressure cooker has simmerd for once now reduce the flame and cook chanas for 3-4 minutes.
Chanas are boiled now take it off flame.
Meanwhile prepare masala for the chanas.
Preheat pan and add 2 tbsp oil in it.
Slightly fry paneer chunks and take them out.
Fry until it turns brown in color.
Now take it out in a plate.
You can also add raw paneer but fried paneer adds more flavor.
Now prepare masala for the chanas.
Add cumin seeds.
Also add coriander powder,pomegranate seeds,ginger and green chilly.
Along with grinding the ginger in masala thinly slice and add some more ginger for better taste.
Add green chilies if you prefer eating spicy.
Now add tomato-green chilly paste as well.
Saute the masala until oil starts floating on the surface.
It takes 4-5 minutes for sauting the masala.
Keep stirring constantly.
Masala is ready;now check the chanas.
Remove the tea bag from chanas.
Chanas have boiled,now add these in the masala.
Add some water as per your preference.
Add some salt and paneer chunks in the chanas and mix well.
Cover the pan and cook for 2-3 minutes so that all spices get absorbed in the chanas.
Now add garam masala and coriander leaves in the chana's.
Always prefer adding coriander leaves and garam masala in the end so that their aroma stays for long.
Chanas are ready with pleasing aroma and texture.
Turn off the gas.
Appetizing chole masala is ready.
We have used 250 grams kabuli chana for making this recipe.
This much amount of chanas can be served to four family members.
Serve chole masala with chapatti,parantha,naan or rice.
