Bamieh(Okra Stew) بامية باللحمة

Hi and welcome back to najatskitchen
Today, I will teach you how to make Bamieh (Okra Stew)
the ingredients are:
500 grams lamb shoulder chops
600 grams frozen small okra
1 kilogram ripe vine tomatoes blended with 1 cup of water and ½ teaspoon salt,then strained
1medium onion(diced)
2 tablespoons tomato paste(optional)
4 large garlic cloves(minced or finely grated)
1 tablespoon fresh lemon juice
¼ teaspoon all spice
¼ teaspoon coriander
¼ teaspoon black pepper
¼ teaspoon salt
1/4 teaspoon cardamom
1/4 teaspoon cinnamon
corn oil
Mix all spices and pat dry the meat with paper towel
you could use any cut of meat as you wish(bone- in or boneless)
sprinkle the meat with the spice mix and press it on the meat to adhere
Toss the okra with 2 table spoons of corn oil ,while still frozen
lay the okra in one layer in a baking sheet lined with baking paper
Roast at 400 F for about 25 minutes ,turning once with a metal spatula.
heat one tablespoon of corn oil on high heat and sear the meat for about 5 minutes on each side
Remove to a plate
Saute the onion at medium heat until translucent
Add the tomato puree and scrape the bits in the bottom of the pan
Bring to a boil,return the meat and add one bay leaf
cover and simmer until the meat is fork tender( about1 hour)
Add the roasted okra ,remove the bay leaf and cook uncovered for 15-20 minutes or until the okra is cooked
Heat 1 tablespoon corn oil in a small frying pan over medium heat,fry the garlic until golden
Add it to the stew and add the lemon juice,let boil and adjust the thickness of the sauce
add boiling water to thin it
justify the seasoning and serve hot with rice or pita bread.
