Today we will make handvo.
It is a traditional Gujarati dish.
Prepared with mix lentils, vegetables and very les oil, handvo is a type of salty cake.
It is very delicious and very nutritious.
Prepare it for breakfast or during supper.
Let’s see what all ingredients are required for making handvo.
Rice - ½ cup
Chana dal - ¼ cup
Moong dal - ¼ cup
Urad dal - ¼ cup
Clean, washed and soaked for 4-5 hours in water.
Bottle gourd - 1 cup (grated)
Cabbage - ½ cup (sliced thinly)
Carrot - ½ cup (grated)
Curd - ½ cup
Green coriander - 2 tbsp (finely chopped)
Baking soda - ¾ tsp
You can also use eno fruit salt in place of baking soda.
Salt - 1 tsp (as per taste)
Sugar - 1 tsp
Turmeric powder - ¼ tsp
Red chilly powder - ½ tsp
Green chilly - 2 (finely chopped)
Ginger - 1 inch piece (grated) (or use 1 tsp ginger paste)
Lemon juice - 2 tsp
Oil - 4 tbsp
Sesame seeds - 2 tsp
Red mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Asafoetida - 1-2 pinch
For making handvo grind all lentils first.
Place rice in mixture jar.
Grind them coarsely and take out in a bowl.
Place moong dal and chana dal in jar and grind them coarsely as well.
Add little amount of water so that dal can be grounded easily.
Now finely grind the urad dal as well.
Add little water.
Mix all the lentils.
Add lauki, cabbage and carrot in the paste.
Mix all ingredients nicely.
Add ginger, green chilly, red chilly, turmeric powder, sugar, salt, green coriander, lemon juice and curd.
Mix all ingredients really well.
Now we will prepare tadka and preheat oven.
We can bake it in oven or prepare it in pan as well.
It can also be prepared in pressure cooker.
We will prepare it in oven.
Preheat a pan and add oil into it.
When oil gets heated add red mustard seeds, cumin seeds and sesame seeds.
Also add curry leaves and asafoetida.
Mix half the amount of tadka in the batter and keep the rest for garnishing.
We will bake the handvo in this container.
Grease the container with oil.
Now add baking soda in the batter.
Don’t whisk the batter too much.
The batter for handvo is now ready.
Pour 2 tsp tadka in the container as well.
Pat it on the surface so that batter gets even.
Now pour the tadka on top of the handvo.
We will also prepare one small handvo in a small utensil.
Sprinkle some red chilly powder on the surface of handvo.
Preheat oven at 200 degree centigrade.
Set the oven for 15 minutes on 200 degree centigrade and then check.
Handvo appears to be golden brown from the top, it is ready now.
For making handvo, bake for 15 minutes first at 200 degree centigrade
If the batter sticks to inserted knife then bake for 5 more minutes with the bottom rod on. Turn off the above rod.
Baking time may vary with different oven models.
Bake for 15 minutes first and then keep checking after every 5 minutes.
Insert a knife; if it comes out clean then handvo is ready.
Let them get frigid then separate them from container.
Place a plate and then flip it.
Run knife all around the container like this so that it gets separated from the container.
Loose up the lock and take out handvo.
Lip smacking and crusty Handvo, that means salty cake made from mixed lentils is ready.
