Malai Ladoo/Kesar Malai Ladoo Recipe for Janmashtami

Today we will make kesar malai ladoo.
These ladoos are very delicious to eat and can be prepared on any festival or any special occasions.
Let’s see what ingredients are required to make kesar malai ladoo.
Paneer - 400 grams (crumbled) (2 cup)
Malai - 1 cup (taken out from home milk)
Powdered sugar - 1 cup
Cashew nuts - 2 tbsp
Pistachios - 1 tbsp
Green cardamom - 4
Saffron - 25-30 threads
Yellow color
Firstly cook malai in pan for making kesar barfi.
Add malai in pan and turn on the gas. Cook for 5-6 minutes until it becomes thick.
We are using malai and paneer for making these ladoos, but we can make
these ladoos by using mawa and paneer or condensed milk and paneer.
If we are making ladoos with mawa and paneer then take 1
cup (200 grams) mawa and add crumbled mawa in the pan.
Cook for 3-4 minutes then add paneer in the mixture.
If we are using condensed milk for making kesar ladoo then take 1 tin (400 gram) condensed milk.
Take 1 tsp ghee in the pan and add milk in it.
Cook for 4-5 minutes until milk becomes thick and repeat the rest of method.
If are using condensed milk and paneer then skip sugar because condensed milk has large amounts of sugar.
For 400 grams condensed milk take 200 grams of paneer.
Malai has become thick; now add paneer in the pan.
Stir continuously on medium flame.
Cook for 5-6 minutes until it becomes thick.
Meanwhile cut cashew nuts, pistachios and make powder of cardamom.
Add melted malai in the saffron and add in the mixture once it gets cooked.
Malai and paneer are now cooked well. Ghee has started floating on the surface.
Now add saffron and roast more.
Saffron doesn’t give much color as we are looking for.
So add 1 pinch yellow color in the mixture to give them a nice color.
Cook more until saffron and yellow color get incorporated well in the mixture.
We have got a very good mixture with appropriate color and texture.
Now stop cooking it more and take out the mixture in a plate so that it gets cooled quickly.
Once it cools down, quickly add sugar in the mixture and make ladoos out of the mixture.
The mixture has got normal temperature, add sugar and mix well.
If we add sugar in hot mixture then the sugar starts melting.
Make it cooled down so that you can touch it with your hands.
Mix sugar well and add sliced cashew nuts, cardamom powder.
Now make ladoos from the mixture.
Take a little amount of mixture (lemon size) and give it a ladoo or round shape.
Like wise prepare all ladoos.
Garnish with pistachios.
Kesar malai ladoo are ready and taste amazing.
