Today we will make lauki (bottle guard) raita. Raita should always be accompanied with every meal. It is very nutritious as well as enhances the flavor of every meal.
Let’s see what ingredients are required to make lauki raita.
Bottle guard - 250 grams
Curd - 2 cup
Ghee - 1tsp
Green coriander - 1 tbsp (finely chopped)
Green chilly - 1 (finely chopped)
Salt - 1 tsp
Cumin seeds - ½ tsp
Asafoetida - 1 pinch
Firstly cut and boil lauki for making raita.
We have used washed lauki and now peel it.
Dice it in to small pieces.
We can also grate the lauki.
Now we will boil the lauki.
Place the lauki chunks in a utensil and add ½ cup water for boiling it.
Turn on the gas and boil until it becomes soft.
It takes 8-10 minutes for boiling the lauki and if we use grated lauki then it boils more easily and quickly.
Check the lauki. It took 10 minutes to boil the lauki.
It can be boiled in pressure cooker as well.
Take out the boiled lauki in a bowl.
Mash the boiled lauki coarsely with a spoon. If you need finely mashed lauki then use mixture grinder.
Add beaten curd to the mashed lauki.
Also add green chilies, green coriander leaves and salt to the curd.
If you wish to have spicy curd, add little red chilly powder.
We have kept the chunks slightly big because they taste better.
Mix all ingredients well. Now we will add tadka to the raita.
Preheat a pan, add ghee and when ghee is hot enough add cumin seeds.
When cumin seeds are roasted, turn off the gas and add asafoetida powder too.
Now add the tadka into raita.
Lauki raita is ready.
We have used cumin seeds for tadka but instead of using cumin seeds use rei (black mustard seeds).
Lauki raita is ready. This much quantity can be served to 3-4 family members.
