Raita when served along with meals increases their taste.
If we make different types of Raita everyday then it gives a twist to the food.
Raita does bring more flavors to the food but it also helps in improving the digestive system.
Today we will prepare Baingan ka Raita.
Ingredients required:
Curd - 2 cups (whipped)
Brinjals - 4 (small)
Green coriander - 2 tbsp (finely chopped)
Black salt - less than 1/4 tsp
Plain salt - half of 1/4 tsp (add to taste)
Heeng (asafoetida) - 1 pinch
Jeera (cumin seeds) - 1/2 tsp
Green chilly - 1 (finely chopped)
Oil - to fry brinjals
First of all we need to cut and fry the brinjals to make Raita.
Turn on the gas and let the pan heat.
Till then let us cut the brinjals into pieces.
Pour some oil in the pan.
Remove the stem of the brinjal then cut it into thin round slices.
Cut the round slices into half.
Now we will fry these pieces of brinjal.
The oil has heated, put the brinjal pieces in it to fry.
Don't cut the brinjals before hand as they turn black in color. Cut when about to fry.
Turn the pieces over. The brinjal pieces have become light brown so take them out of the pan.
We have fried the brinjals, now put these in curd.
Add black salt, plain salt, and green chilly and green coriander. Mix all of the ingredients.
Now let us apply Tadka. Put Jeera and Heeng in oil. Once Jeera is roasted, pour this Tadka over the Raita and mix.
Garnish with some green coriander on top.
Delicious Baingan ka Raita is ready.
