What are you going to cook? Fried Eggplant Chutney (Vankaya Bajji)
Ingredients required to make Fried Eggplant Chutney
Eggplant (Brinjal), Green Chilli, Tamarind, Cumin Seeds, Chopped Onions, Coriander Leaves, Garlic & Salt
Let's see how to make the fried eggplant chutney
Firstly, roast the eggplants
Roast them till they're well done
Once done, keep the eggplants aside
Now, peel the roasted skin off of the eggplants
You can use a traditional Indian stone grinder if available or you can use a regular electric food blender
Grind some fried green chillies into a soft paste
Add the eggplants and grind them
Add some tamarind, as per taste and keep grinding
Now, add some salt as required
Add some garlic and grind it
Add some cumin seeds
Add some chopped onions into the mix
Take the chutney in a bowl
Finally, garnish with some chopped onions and coriander leaves
