Today we will prepare Masala Dosa.
Dosa is cooked in less amount of oil, it is full of carbohydrates and protein.
It is a very delicious dish.
Dosa is a south Indian recipe but it is so delicious
that its eaten in all cities by everyone.
In big cities Dosa can be eaten in south Indian restaurants.
It also very easy to make so we can make it at home with ease.
There are different types of Dosa one can make like Plain
dosa, Masala Dosa, Paneer dosa and Paper dosa etc.
Ingredients required:
Urad dal and rice mix (prepared earlier)
- 1 portion Urad dal and 3 portions of rice(for eg: if we take 1/2 cup red dal then take 1 1/2 cup rice).
Soak the two separately; put 1 tsp methi seeds in Urad dal.
Soak the two for 4-5 hours then drain water and grind them separately.
Make a fine paste of dal and grind rice to a bit coarse paste.
After grinding dal and rice mix them together.
Add 1/2 tsp baking soda and 1/2 tsp salt.
Mix the mixture thoroughly and its consistency should be similar to Pakora batter.
Fill the mixture in a container which can be properly sealed then keep it in a warm place.
Mixture ferments in 12-14 hours during summers else it takes 20-24 hours in winter.
Oil - 2 to 3 tbsp
Green coriander - 2 to 3 tbsp (finely chopped)
Shelled green peas - 1/2 cup
Potatoes - 4 (medium sized)
Mustard seeds - 1/2 tsp
Ginger - 1" long piece (grated or 1 tsp ginger paste)
Green chilly - 1(finely chopped)
Salt - 1/2 tsp
Red chilly powder - 1/4 tsp
Coriander powder - 1/2 tsp
Amchur (mango) powder - 1/4 tsp
Turmeric powder - 1/4 tsp
We require all of these to make the Dosa filling and
we need a little salt to put in the dal-rice mix.
Add 1/2 tsp salt to the dal-rice mixture and mix.
Now let us prepare the filling for Dosa, turn on the gas.
Pour 3 tsp oil in heated pan.
Peel the potatoes which we have boiled before hand.
Now that the oil is hot put mustard seeds and roast.
Add peas and fry them while you place a lid over the
pan so that the peas do not jump out of the pan.
Cover the pan for some time so that the peas turn tender.
The peas are cooked and have become crunchy.
Add ginger, green chilly, coriander powder, turmeric powder and fry them for some time.
Break the potatoes and put them in the pan followed by
Amchur powder, salt red chilly powder and green coriander.
Mix all the ingredients thoroughly and fry them for 2 minutes.
The filling for Dosa is prepared.
Now let us make Dosa, heat the pan.
Pour some oil on the pan and spread it evenly with a cloth or napkin.
Pour 2 spoons of mixture on the pan
and immediately spread.
Increase the flame
Pan should not be heated much when we spread the dosa.
Then only we can spread the dosa properly.
Increase the flame when we have completed spreading the Dosa.
Spread oil all around the Dosa.
Put the filling on the Dosa when the colour of Dosa has changed.
Decrease the flame of the burner once again.
Fold the Dosa since it has cooked from the lower surface.
Take out the Dosa from the pan
Wipe the pan once with the wet cloth to prepare another Dosa.
It decreases the temperature of the pan.
Pour 2 spoons of batter in mid-flame once again.
Spread the Dosa in a circular way with the spoon.
Put filling on it.
Masala Dosa is now ready.
Prepare all Dosas in the same manner.
Serve Masala Dosa with Sambar, coconut chutney and groundnut chutney.
