Today, we're going to spice things up in the kitchen
with a bean dip.
This bean dip salsa will be what everybody is talking about.

(Kelly Massa). Hi, my name is
Kelly Massa and I'm a senior dietetics student
at Eastern Illinois University.
I'm going to be showing you how to make Texas bean salsa.
It is a very quick and easy and healthy recipe to make.
First of all you need to chop up your vegetables.
You start by adding one green pepper, one tomato, 1/2 cup of
onions, a teaspoon of garlic, and two cans of black-eyed peas.
All of these ingredients are very healthy.
Some of them may even provide you with health benefits.
For example, the garlic and onions, they help regulate your
blood pressure and they also may reduce some risk of cancer.
Another one is tomatoes.
They contain lycopene and they may reduce some of the cancers
and they also protect against heart disease.
Last of all, the black-eyed peas, which is a type of bean,
is a very good source of fiber and they also might protect
against heart disease.
You just need to mix up all of these ingredients very well.
Then you add 1/2 cup of light Italian dressing.
Then mix all of the ingredients, again, very well.
Once you have done that, you need to cover the mixing bowl
and you need to put it in the refrigerator over night so that
the ingredients are all able to marinate.
This is the final product here after it set in the refrigerator
and you can serve this salsa with either tortilla chips
or whole wheat crackers.
So as you can see, this is a very easy
and healthy recipe to make.
