Arbi Ki Sabzi tastes very good with Puri or Parantha.
We often prepare Masaledar Arbi or Rasedaar Arbi.
Today, we will prepare Sunhari Kurkuri Arbi.
Let us see what all do we require to prepare Sunhari Kurkuri Arbi.
Washed and dried Arbi (Colocasia) - 250 grams.
Finely chopped coriander - 2 to 3 tbsp.
Oil - to fry Arbi and vegetable.
Jeera (cumin) - 1/2 tsp.
Ajwain (carom seeds) - 1/2 tsp.
Heeng (Asafoetida) - 1 to 2 pinch.
Haldi powder (turmeric) - 1/4 tsp.
Dhaniya powder - 1 tsp.
Salt - more than 1/2 tsp.
Aamchur powder - 1/3 tsp.
Red pepper - 1/4 tsp.
Garam Masala - 1/4 tsp.
Grated ginger - 1 piece of 1 inch.
Don’t add ginger if you don’t want it.
Green chilli - 2.
We’ll have to boil Arbi first to prepare Sunhari Kurkuri Arbi.
Add one cup water in it.
Close the cooker with a lid.
Cook Arbi in mid-flame for 2 minutes after 1 whistle.
Decrease the flame of a gas and now cook Arbi for 2 more minutes.
Turn off the gas now and do not open the cooker till the pressure of cooker finishes.
Open the lid of cooker since pressure in it has finished.
Arbis have turned soft and we will take them out in a bowl.
Peel Arbis when these cool down.

Now, press Arbis with both hands and make it flat.
We will fry Arbis since we have flattened all the Arbis now.
Turn on the gas and take oil in the pan.
Put all these Arbis in oil.
Turn the sides of Arbis when the lower surface of Arbi has turned brown.
We will take them out now since these have turned golden brown from both the sides.
Arbis are prepared now take out all the oil from the pan.
Leave 2 tbsp oil in the pan.
Ajwain tastes very good in Arbi.
Add Jeera, Ajwain, Heeng, Haldi powder, dhaniya powder, ginger and green chillies in it.
Also add Arbis in it.
Add aamchur powder, red pepper, garam masala and salt in it.
Fry Arbis by constantly turning it till the time a coat of spices appears on Arbis.
Also add green coriander in it.
Fry Arbis for 2 minutes.
Arbis are now ready.
Take these out in a bowl.
Garnish it with green coriander.
Sunhari Kurkuri Arbi is ready.
It can be served to 3 to 4 members of family along with any meal.
Serve it with Puri or Parantha.
