Sweet Corn Cutlets

we all feel like preparing something tasty and delicious on our weekends.
today we will make sweet corn cutlets which are not tasty but nutritious too.
ingredients required:
sweet corn - 1 cup
potatoes - 2 (boiled)
capsicum - 1/2 cup (finely chopped)
green coriander - 2 tbsp (finely chopped)
we crushed 4 bread slices in a mixer into bread crmnbds.
oil - 2-3 tbsp
flour - 2 tbsp
black pepper - less than 1/4 tsp
salt - 1/2 tsp
ginger - 1 inch long piece (grated or 1 tsp paste)
green chilly - 2 (finely chopped)
firstly we need to grind sweet corn in a mixer to make a coarse paste.
take out the paste in big bowl.
peel the potatoes.
they can also be cooked in the microwave.
break potatoes into small fine pieces.
put the potatoes,capsicum,green coriander,salt,ginger,green chillies and half of the bread crumbs in sweet corn paste.
sweet corn contains some water which makes if wet so ading the bread crumnbs makes the mixture dry and better.
bread crumnbs play a double role in the recipe:
a)it thickens the juice releashed from the sweet corn.
b) it binds the mixture together.
you can also prepare these cutlets by deep frying if you want or you can shallow fry them on a pan.
our paste is ready so let us prepare the flour mix.
put flour in a bowl.
pour some water on it.
we will blend the flour with until it turns into a uniform mix.
add black pepper and salt to the flour mix.
the mix should have a thin consistency.
4 tbsp water is enough for 2 tbsp flour to make a mix.
take some mixture in your hand, shape it into a round culet.
you can make oval or round cutlets any shape you want.
dip this cutlets in the flour mix,immediately wrap the cutlets in bread crumbs and keep it on a plate.
similarly make cutlets with the remaining sweet corn paste and keep on a plate.
the pan is heated to fry the cutlets.
we can check if the oil is heated by putting little but of the mixture in oil.
if it rises up to the surface then the oil is heated else it will sink to the bottom.
put cutlets in hot oil.
fry the cutlets on a medium flame till they turn brown on both sides.
when the lower side turns brown turn the cutlets over.
we will deep fry some of the cutlets and shallow fry the others.
now that the cutlets have turned brown in color on the sides take them out and keep on a plate.
let us shallow fry the remaining cutlets.
heat a flat pan (tawa).
pour some oil in it and spread all over.
place cutlets on the hot pan.
pour some oil all around.
and shallow fry the cutlets on a low flame till they turn brown on both sides.
when the lower side turns brown turn the cutlets over.
fry the cutlets till they turn brown on the other side too.
now that the cutlets have turned brown in color on both sides.
turn of gas.
sweet corn cutlets is ready.
serve sweet corn cutlets with green coriander chutney and sweet chutney.
