Marwari Gatta Pulao Recipe video

Today we will prepare Gatta Pulao.
It is very famous in Rajasthan's Marwari community.
Gatta Pulao is high on protein and carbohydrate thus making it very nutritious.
You can prepare it for any festival or when you have guests over.
. It is very delicious.
Ingredients required for gatta :
Gramflour - 1 cup
Curd - 2 to 3 tbsp
Oil - 2 tbsp
Salt - 1 tsp
Coriander powder - 1/2 tsp
Red chilly powder - 1/4 tsp
Garam masala - 1/4 tsp
Ajwain - half of 1/4 tsp
For Pulao :
Rice - 1 cup
which has already been prepared in the microwave
Soak 1 cup rice in water for 15-20 minutes, add double the water in microwave
friedly bowl with 1 tsp Ghee. Cook for 10 minutes. Rice will be ready
Green coriander - 2 to 3 tbsp
Ghee - 2 to 3 tbsp
Garam masala (whole) - 2 elaichi, 10 black pepper corns, 4 cloves and 1" long cinnamon stick
Turmeric powder - 1/4 tsp
Jeera (cumin powder) - 1/4 tsp
Ginger - 1" long piece (grated)
Green chilly - 1 (finely chopped)
As rice is already prepared we will not make Gatte for which we have to knead the gram flour.
Put oil, curd, coriander powder, red chilly powder, ajwain (crush a bit), garam masala and 1/4 tsp salt in gramflour.
Mix all the ingredients thoroughly.
We need to make a soft dough.
We have prepared a soft dough without using any water.
If you feel the dough is a bit dry then you can add little water to it.
Cover the dough and keep aside for 10-15 minutes allowing it to ferment then we will make Gatte.
Till then set water to boil as we need to boil Gatte in water.
Take 2-3 cups water or as much sufficient to submerge Gatte easily while boiling.
Put on a lid so that water boils quickly.
After 15 minutes the dough must have set so, let us make Gatte with it.
Apply some oil to your hand, break a piece from the dough and roll it lengthwise (1/2 - 1/4 inch in diameter).
Make long rolls with the entire dough and boil them.
Water is boiling, put the rolls in boiling water which will be cooked by 10-12 minutes.
They will come up to the surface.
Put the lid on so that steam is formed.
Gatte are now boiled, it took 15 minutes to boil them.
Turn off the gas.
Take them out on a plate and allow Gatte to cool before cutting.
Gatte are ready so let us make Pulao. Heat a pan.
Keep the Gatte ready by cutting them into 1/2 cm long pieces.
We are done cutting the Gatte and the pan has also heated.
Add jeera in hot oil followed by garam masala (which was whole but we have grinded it), fry gently.
Add ginger, green chilly, turmeric powder and fry the spices for some time.
Now put in the Gatte, mix then add rice and salt.
Mix all the ingredients thoroughly.
Add some coriander leaves as well.
Fry Pulao as you stir it for 2 minutes.
Take out Gatta Pulao in a tray or plate, garnish with some coriander leaves.
Gatta Pulao is ready. Just remember a few things while making Gatta:
After preparing the dough, rolling the pieces and cutiing them check that the water is boiling before you put Gatte in it.
If the water is not boiling and you put the Gatte in it then they might dissolve in water.
Hence, the Gatte should be put only after the water has started to boil.
Excluding this, preparimg Pulao is very easy.
