Sai Baba's favorite food was Brinjal, so, I will make Vankaya Bajji Pulusu
Ingredients required to make Vankaya Bajji Pulusu
Brinjal/Egg Plant, Dry Red Chillies, Green Chillies, Tamarind, Curry Leaves, Coriander, Salt, Red Chilli Powder, Turmeric, Oil
First, take the egg plant and smear it with oil, and then make small slits into it with a knife
Now, roast the egg plats over an open flame
Once, the egg plants are properly fried. let them cool and then peel off the burnt outer layer
Take the peeled egg plants into a bowl and mash them up
Take a bowl of soaked tamarind and squeeze the juice
Add the tamarind juice to the egg plants
Add some salt, red chilli powder and some turmeric powder and mix well
Take a pan and heat some oil
Add some bengal gram, white lentils, mustard & cumin seeds. Also, add dry red chillies & green chillies
Add some curry leaves and some coriander
Now, add the fried seasoning to the bowl of mashed egg plants
Mix it properly
