Making a Hummus Pizza Recipe : Adding Lemon to Hummus Pizza

On behalf of Expert Village my name is Dina Cutrone of Tall Order in New York City and
today we are making hummus pizza. Okay the next thing we are going to do is we are going
to put some lemon juice. So let me show you how to get the best out of your lemon. It
is only half a lemon actually. First before you do it we should roll it and this actually
releases the juices in the lemon. A trick that I think most people know but you do that
and it releases the juices and then you cut it down the middle. Then I have this really
great cooking equipment called a rimer and it is made out of wood and what you do is
you just press it to the lime/lemon (I keep saying lime) and you squeeze out all the juice
and you can see that I have a mesh drainer over my container so that the pits would get
caught there and any pieces of the lemon that are release would get caught there and all
that is left in the container would be juice. So that is good you see how it gets all the
juice out so it is a really great tool and here is out lemon juice. Like I said that
is a half of a lemon.
