Mango Burfi recipe

Summers are season of mangoes.
Ripe mangoes are easily available in market these days.
Mangoes are loved by all and can be used to prepare many things.
Today, we will prepare Mango Burfi.
Let us see what are the ingredients we require to prepare Mango Burfi.
Mangoes - 2
We can also take 2 cup pulp of mangoes or we can peel these mangoes and take the pulp out of these mangoes.
Crumbled mawa (Dried milk) - more than 1 cup or 250 grams.
We can also take condensed milk, milk powder or Besan in place of Mawa.
Sugar - 1 cup
Cashew-nuts - ¼ cup
Ghee - 1 tbsp
Cardamom - 5 to 6
Pistachio nuts - 10 to 12
Let us peel the mango first to prepare Aam Ki Barfi.
Take out the pulp and cut it into pieces.
Grind the pulp in the mixer.
Also add sugar in it.
Pulp is now ready.
Now, we will prepare the Mawa in the pan.
Crumble the Mawa with hands or grate it.
Turn on the gas and add 1 tbsp ghee in it.
Roast the Mawa till it turns light brown by stirring it constantly.
Mawa is now ready since it has turned light brown.
Turn off the burner and take out Mawa in a bowl.
Take pulp in a Kadhai and cook it till it turns thick.
Cook it till it reaches at a stage where it is ready to freeze.
Prepare cashew nuts and Pistachio nuts in the meantime.
Make 5-6 pieces of cashew nuts.
Pistachio nuts should be cut lengthwise.
You should take care of the pulp of mango and should stir it in every 2 minutes.
The pulp has turned thick now. Mix cashew-nuts in it.
It can be easily frozen now.
Check it by keeping it in your fingers.
Cool the pulp now.
Apply some oil on a plate.
Mix the Mawa in the pulp.
Mix all the things nicely.
Now, let prepare the Burfi.
Put the mixture in the plate on which oil is applied.
Spread it with the help of a spoon.
Spread Pistachio nuts over the mixture.
Press it lightly with the help of a spoon.
Keep the plate at a cool place to freeze the Burfi.
It might take 2-3 hours to freeze the Burfi.
Burfi is ready and we will now cut it.
Heat the plate of Burfi by rotating it from all the sides.
Cut the Burfi now. We can cut them in any shape.
Mango Burfi is now ready.
The yellow colour of mango barfi depends on the kind of mango used.
If the mangoes are dark yellow, than the Burfis will be dark yellow.
The Burfis will be light yellow if mangoes are light yellow.
You can also use yellow colour if you need dark yellow colour in Burfis.
