Today we will prepare kaju katli.
It is very delicious in taste and moreover it is very easy to prepare.
Let’s see what ingredients are required to prepare kaju katli.
Kaju (cashew nuts) - 1.15 cup
Sugar - 1/2 cup
To prepare kaju katli we first need to grind the cashew nuts finely. Prepare the powder first.
Finely powder is prepared of cashew nuts.
Now we will prepare sugar syrup with help of sugar.
Put sugar in a pan and add less then 1/4 cup of water almost 3 tbsp. Put the gas on and prepare one thread syrup.
Let the sugar melt.
When the sugar melts, cook it for more 2-3 minutes.
The sugar syrup is ready; add cashew nuts powder to the syrup.
After mixing the cashew nuts powder cook it till it gets thick consistency.
Keep the flame to minimum and stir it continuously.
Cook it well so that there are no lumps.
Check the paste. Pour little amount of paste in a bowl and check whether it has become thick or not.
Barfi paste is ready. Put off the gas.
Take out the paste in a bowl because it will take long to cool in the pan.
Grease the plate with ghee and place the paste on it.
Paste has cooled down, now we can hold it with our hands.
Make a round ball out of the paste and now roll it.
Place a butter paper before placing the paste on the surface so that the baurfi does not stick to the surface.
Grease the butter paper with ghee.
With help of your hands, press the paste from all sides evenly.
Put some ghee on the rolling pin too and roll the paste in
square shape so that it becomes easy to slice out the katli's.
We have rolled the paste. Leave for 10-15 minutes so that it gets fermented.
It takes 10-15 minutes to ferment the barfi.
Now we will cut it in any shape we desire (square or diamond shape)
Take out pieces in a plate.
We have cut the barfi, we can even use silver coating to garnish it but these coats are harmful and even non vegetarian.
Delicious kaju katli is ready.
