Today we will prepare Chaawal ke Atte ki Roti which is very tasty and nutritious.
Chaawal ke Atte ki Roti is a speciality of Bihar which is accompanied by Sweet and Sour Pumpkin curry.
They make a great combination, this roti can be had with any thick curry but nothing beats the Pumpkin curry.
Ingredients for Chaawal ke Atte ki Roti :
Rice flour - 1 cup
Oil - 2 tbsp
Salt - 1/4 tsp or add to taste
Firstly we have to knead the flour to make Chaawal ke Atte ki Roti.
Pour 1 cup water in any utensil and let it boil.
Put the lid on as it helps the water to boil faster.
As water starts to boil we will put the flour in it.
Now that the water is boiling put salt and 2 tsp oil in it.
Lower the flame then put the rice flour in boiling water. Mix properly, turn off the gas.
Cover the utensil with rice flour for 5 minutes so that steam is constanly formed and the flour gets soft.
After 5 minutes, the rice flour is ready to make rotis.
Take out the flour in a big bowl, press using a spoon as the flour is still hot.
Once the flour cools we will knead the flour till it turns soft.
We have heated some extra water apart from the 1 cup we used earlier.
So if you feel the dough is dry then add some water to it.
It depends on the quality of rice as to how much water it requires
usually 1 cup rice flour requires 1-1 1/4 cup water.
Apply some oil on your hand and knead the dough thoroughly till it turns very soft.
Add little water as the flour seems a little dry.
Keep kneading till the dough becomes very soft.
Now that we have prepared soft dough
cover it and keep aside for 15-20 minutes allowing fermentation.
After 20 minutes, the dough must be ready by now.
Pour some oil on your hand and press the dough to make it smoother.
The dough is ready so let us start making Chaawal ke Atte ki Roti.
Heat a flat pan.
Break a lemon sized piece from the dough and shape it into a ball.
Chaawal ke Atte ki Roti can also be rolled on a thick polythene sheet.
Apply little oil between 2 sheets, place the dough piece then roll with a rolling pin.
Here we will roll this roti on a board using some dry flour.
Apply dry flour on the dough piece then expand it a bit by pressing with your hand.
Apply some more dry flour then gently roll the roti as you press its edges.
The edges should not be too thick.
The roti is ready, carefully pick it up and place on the heated pan.
When the parantha is cooked on the lower surface we will turn it over.
Roti is cooked on the other side as well so turn it over again.
Cook roti till it turns light brown on both sides.
We can press the roti gently with a ladle, cook till brown spots appear on it.
These roti has turned light brown on both sides
so take it out on a bowl on a plate or a plate covered with foil.
Chaawal ke Aate ki Roti takes long to cook. Similarly prepare all the rotis.
We have made 7 rotis with 1 cup of rice flour.
Chaawal ke Aate ki roti is ready.
The ones made here are plain but we can also make Masala Chaawal ki roti, it requires :
Jeera - 1/2 tsp
Onion - 1/2 (finely chopped)
Green chilly - 1 (finely chopped)
Ginger - 1/2" long piece (grated)
Green coriander - 1 tbsp (finely chopped)
While kneading the dough we will follow the same steps as above.
. When the flour is put in boiling water it is to be followed by all of the above mentioned spices.
Then knead the flour thoroughly till soft and smooth dough is formed.
After this step rotis are to be prepared in the similar manner.
And there you have your Masala Rotis ready.
it is also caled akki roti.
Chaawal ke Aate ki Rotis has a great fan following in Banglore and Mysore as well.
In these places the rotis is accompanied by Spicy Brinjal curry and coconut chutney.
After making Chaawal Rotis if you apply Desi Ghee on them then they stay soft for long.
