Matar Mangodi Curry Recipe

We have to include vegetables in our meals everyday and everyone in the
family expects different vegetables with different tastes each day.
Today we will prepare Matar Mangode ki Sabzi.
Ingredients required :
Mangodi - 1 cup
(the ones we are using here are Moong dal ki Mangodi but we can also use Chana dal or Urad dal mangodi).
Green peas - 1 cup (peeled)
Tomatoes - 4 (medium sized)
Ginger - 1" long piece
Green chillie - 2
Oil - 2 to 3 tbsp
Ground nuts - 2 to 3 tbsp (roasted and peeled)
Turmeric powder - 1/4 tsp
Jeera (cumin seeds) - 1/2 tsp
Heeng (asafoetida) - 2 pinch
Garam masala - 1/4 tsp
Salt - 3/4 tsp or to taste
Coriander (dhaniya) powder - 1 tsp
Red chilly powder - 1/4 tsp
Green coriander - 2 to 3 tbsp (finely chopped)
Firstly we need to fry Mangodi
as we will make the curry in a cooker, heat it.
Pour 1 tbsp oil in the cooker
put mangodi in hot oil and fry till they turn light brown.
Continuously stir fry mangodi
now that they have turned brown take them out of the cooker.
Cut tomatoes into big pieces, they have been washed and dried before hand.
Cut chillies into big pieces, peel ginger and cut it too in big pieces.
Grind tomatoes, chillies and ginger in the mixer to make a fine paste.
Also grind the ground nuts along with a little tomato paste.
You can grind just the ground nuts but they are less in quantity and will be difficult to grind alone.
Hence, adding some tomato paste.
Now we will cook and prepare the curry.
The cooker is hot so pour oil in it, put Jeera in hot oil.
After Jeera is roasted add Heeng, turmeric powder and coriander powder.
Fry the spices a little.
Now pour the chilly-tomato- ginger-ground nut paste in the cooker; fry all of the spices till oil starts floating over them.
We have to continuously stir the spices while frying till oil surfaces
spices should not get burnt.
For this curry's gravy we have put in roasted ground nuts.
We can also add sesame seeds (til), coconut, khas-khas, cashew nuts,
little gram flour (besan), arrow root etc. to make the gravy thick.

You can choose the Tari or taste you prefer and put it in the curry to make your desired gravy.
The spices are sufficiently fried as oil has separated from them.
Now put the fried mangodi, green peas and red chilly powder in the cooker
; fry for 2 minutes as you mix all the ingredients properly.
Pour 2-2 1/2 cup water, according to how thin you want your curry.
Also add salt and mix.
Close the cooker with it's lid and cook the curry till 1 whistle goes off.
Now that the whistle has gone off, our curry is cooked.
Turn off the gas; wait till all of the pressure is released.
There is no more pressure left so open the cooker and check the curry.
Put garam masala and some coriander in the curry and mix.
Transfer curry into a bowl, garnish with some green coriader.
Tasty Matar Mangode ki Sabzi is ready
this quantity of curry will serve 4-5 members of your family.
