During winters we do bring makke ka atta (maize flour) in use.
Maize flour gives warmness.
We often make makki ki roti and parantha but today we will make upma from maize flour.
In northern India is also known as salty halwa of maize flour.
Let’s see what all ingredients are required for making upma from maize flour.
Maize flour - 1 cup
Peanuts - ¼ cup
Green peas - ½ cup
Carrot - ½ cup (finely chopped)
Desi ghee - 2-3 tbsp
Coriander leaves - 2-3 tbsp (finely chopped)
Curry leaves - 8-10
Ginger - 1 inch baton (grated)
Green chilly - 1 (finely chopped)
Rai - ½ tsp
Red chilly powder - less then ¼ tsp
Salt - ¾ tsp (as per taste)
For making maize flour upma roast the flour first.
Pre heat pan and place the flour into it.
Stir constantly while roasting it until there is a slightest change in the color.
Flour is roasted; now take it out in a bowl.
Add 2 tsp oil in the pan.
When ghee gets heated add rai, curry leaves, peanuts and sauté for while.
Also add green peas and carrot.
Cover and cook for 1-1.5 minutes so that vegetables get tender.
Now add green chilly, ginger and 2 cups of water.
Also add flour into it and mix.
Add salt and red chilly as well.
Cook it until it gets thick consistency.
Upma has become thick in consistency now add rest of the ghee as well.
We can make upma in 1 tbsp ghee also if you prefer not consuming ghee in large amounts.
Upma is ready; add green coriander in it.
Take out the upma in a plate.
Piping hot and luscious maize flour upma is ready.
We have used carrot, peas but you can use beans, capsicum or which ever you like eating.
Corn can also be used.
It so tempting in itself that it can be consumed as it.
If you want serve it with green coriander chutney or mango pickle.
