Today we will prepare achari arbi (Colocasia). It has very unique taste and is very delicious to eat.
Let’s see what ingredients are required to prepare achari arbi (Colocasia).
Arbi - 250 grams (10 -12) boiled
Mustard oil - 2-3 tbsp
Green coriander - 2-3 tbsp (finely chopped)
Green chilies - 4 (sliced length wise)
Garlic- 1/2 inch piece (grated)
Coriander powder - 1/2 tsp
Fennel powder - 1/2 tsp
Aamchur powder - 1/4 tsp
Turmeric powder - 1/4 tsp
Red chilly powder - 1/4 tsp
Garam masala - less then 1/4 tsp
Salt - 3/4 tsp
Onions seeds (Kalongi) - 1/4 tsp
Fenugreek seeds - 1/4 tsp
Rei - 1/4 tsp
Carom seed (ajwain) - 1/4 tsp
Cumin seeds (jeera) - 1/4 tsp
Heeng (asafoetida) - 1-2 pinch
To prepare arbi firstly peel of all the arbi.
We have peeled off all arbi's, now we will cut them in two halves in length wise.
Now preheat pan, put oil in the pan and add heeng, jeera, ajwain, rei, methi seeds and Kalonji.
Also add green chilies, ginger paste, turmeric powder, dhaniya powder, fennel powder, arbi, some salt, red chilly powder and aamchur.
Add little green coriander and mix well.
Also add garam masala
Stir the arbi and cook for 3-4 minutes.
Arbi is cooked and is smelling good.
Take out arbi in a bowl and garnish with green coriander leaves.
Achari arbi is ready.
This much quantity of vegetable can be served to 3-4 family members as side dish.
Serve with puri, parantha or chapatti.
