Ingredients required for Gutti Vankaya Kura
Brinjals/ Eggplants, Ground Nuts, Tomatoes, Ginger, Garlic, Coriander Seeds Powder, Raw Coconut, Onion, Tamarind, Curry Leaves, Coriander Leaves, Mustard Seeds, Turmeric Powder, Salt, Red Chilli Powder & Oil
First take some round brinjals/ eggplants
Split the eggplants into four parts making sure they still holds together
Grind some tomatoes, tamarind, salt, roasted ground nuts, onion, turmeric powder, raw coconut, red chilli powder, coriander powder, ginger & garlic into a paste
Now stuff the ground paste inside the split eggplants
Keep the left over ground paste aside for gravy
Keep the stuffed eggplants aside
Now heat some oil in a pan
Add some mustard seeds and curry leaves into the pan
Now add the stuffed eggplants into the pan
Now let them cook for 5 minutes
Now add the remaining ground paste into the pan, mix well and cook it for a while
Gutti vankaya kura can be surved with roti, chapathi and rice
Add some water into the pan and let it cook for 5 minutes
Take the Gutti Vankaya Kura into a serving bowl
Now top the dish with coriander leaves
