Cooking Tips : How to Pick and Flavor Red Potatoes

To select red potatoes, you want to find potatoes that have a nice red color to them. The shades
of red can vary from a lighter red all the way to a darker pink, depending on the potato.
You want to make sure that there aren't too many eyes all over the potato - a few of them
are okay, you just don't want to have too many. Also, you want to check to make sure
the eyes aren't very deep into the potato. Also, feel the texture of the potato - it
should be nice and hard. If it's soft or gives in any way, then it is probably an old potato.
Also, red potatoes can come in different sizes. Here we have a larger one, and then we also
have smaller ones. So, depending on what you're going to do with the red potatoes, you may
want to check to see what size you can get. Red potatoes are typically used for making
potato salad or something of that sort. They're not really a good potato to be used to be
mashed. Red potatoes tend to hold their shape very well after cooking, unlike russet potatoes.
