To butterfly your pork chop, first start off with your pork chop. Next what we're going
to do is find where the bone goes around the pork chop, and we're going to remove this
piece of meat here. And I'm just going to take my knife and go around following the
bone. From here, I've got a perfect little fillet of pork, and I'm just going to cut
it in half almost to the very end, but I'm going to stop before I reach the very, very
end here.
From here I can open it up and if I need to cut a little bit more, which I do, I'm going
to cut just a little bit more and butterfly open my pork chop. And that is how you butterfly
a pork chop.
