To select a russet potato, also known as a baking potato, you want to find a potato that's
got a nice brown color to it. Also check to make sure that it doesn't have a lot of eyes.
A few eyes are okay. You just want to make sure that they're not too deep into the potato.
Also feel the texture of the potato. It should be very firm to the touch. If there's a lot
of green or sprouting on the potato, then the potato is old. Russet potatoes are used
really for making mashed potatoes or fried potatoes. However, it's not a really good
potato to use if you're going to to use it for potato salad. After it's cooked, it does
not hold it's shape very well. And that is how you select a russet potato.
