Today we will make eggless dry fruit cake which is liked by all.
Try making this eggless dry fruit cake for your kids during winters as it is full of protein and energy.
Let’s see what all ingredients are required for making eggless dry fruit cake.
Maida - 1.5 cup
Powdered sugar - ¾ cup
Butter - ¾ cup
Milk - ¾ cup
Cashew nuts - ½ cup
Walnuts - ½ cup
Raisins - ½ cup
Almonds - ½ cup
Baking soda - ½ tsp
Baking powder - 1 tsp
Tutti fruity - ½ cup
Condensed milk - ½ cup
For making eggless cake firstly mix maida, baking powder and baking soda thoroughly.
Take maida, baking soda and baking powder in a sieve and
strain the ingredients twice for mixing them nicely.
Now whisk butter, condensed milk and powdered sugar in a bowl.
Take melted butter, powdered sugar and condensed milk in the bowl.
Whisk the batter until it becomes fluffy.
Now cut dry fruits as well.
Add little milk at a time in the butter batter.
Use milk with normal temperature. Avoid adding cold milk.
Whisk it thoroughly and add maida into the batter.
Mix well.
Also add milk and mix.
The batter is ready; now add all dry fruits into it.
Add walnuts, almonds, cashew nuts, raisins and tutti fruity.
Mix all ingredients really well.
The batter for making eggless dry fruit cake is ready.
Preheat oven.
Meanwhile prepare the container for baking cake.
Grease the container with ghee or butter from all around.
Also grease the butter paper as well and place it in container.
Now pour the batter in container.
Pat the container on the surface like this so that the batter becomes even.
Preheat microwave at convection mode on180 degree centigrade.
Now place the cake in microwave for baking.
Place a net wire first and place the cake container on top of it.
Set the microwave at 180 degree centigrade on convention mode for 25 minutes.
We have baked the cake for 35 minutes, now check the cake.
For this insert a knife inside the cake, it should come out clean.
If cake sticks to knife it means cake is not cooked properly.
Bake the cake again at 160 degree centigrade for 10 minutes.
Cake is now ready.
It took complete 45 minutes for baking the cake.
Insert a knife. It should come out clean.
Baking time may vary as the models of microwave.
Bake the cake for 25 minutes first and keep checking after every 5-10 minutes.
Let the cake get frigid, and then take it out from container.
Run knife all around the container like this.
Place plate on top of the container and then flip it.
Remove the butter paper.
Very tempting and pleasing looking cake is ready.
This cake can be stored for up to 1 month.
