Fresh curry leaves are added in curries or dal to enhance their taste and aroma.
If we grind fresh curry leaves and use them while preparing curries and dal then it will enhance their flavour much more.
Kadi Patta Powder is added to curd and Raita as it increases their flavour too.
Today we will make Kadi Patta Powder.
Ingredients required :
Fresh curry leaves (twice washed in water, kept in a strainer and dried)
Oil - 2 tsp
Channa dal - 2 tsp
Salt - 2 tsp
Rie/black mustad - 1 tsp
Jeera (cumin seeds) - 1 tsp
Methi (fenugreek) seeds - 1/2 tsp
Amchur (mango) powder - 1 tsp
Red chillies - 2 to 3 (add more if you prefer spicy)
Firstly let us roast the curry leaves.
Turn on the gas.
The pan is heated, pour 1 tsp oil in it along with the curry leaves.
Stir continuously as you cook the curry leaves on a low flame till they turn crisp.
The curry leaves have been roasted and become very crisp.
Don't cook any further.
Transfer the roasted curry leaves in a bowl.
Now let us fry the remaining spices.
Pour less than 1 tsp oil in the pan
Add Channa dal at first and fry it on a medium flame till it turns light brown.
Channa Dal has turned light brown. Add Jeera, Methi seeds and Rie.
Fry all the ingredients on a low flame till they become brown, do stir continuously.
Jeera, Methi etc need to get slightly roasted.
Keep a low flame, don't increase it else the spices will burn.
Turn off the gas.
As the pan is still hot, keep stirring the spices for about 1/2 minute.
The spices emit a lovely aroma.
The spices are roasted, add red chillies to it.
Spices are ready, cool them a bit.
Now that the spices are cooled, let us grind them.
Put the leaves, roasted spices, salt and Amchur powder in the mixer.
Grind these spices to a slightly coarse powder.
Spices have been grinded.
Kadi Patta Powder is ready.
This powder can be added to dal, curry, curd, Raita etc.
