Coconut Stuffed Eggplant Recipe

Today, we will prepare Nariyal Wale Bharwa Baigan.
Nariyal Wale Baigan are prepared in southern India and are very delicious.
Let us see what all do we require to prepare Nariyal wale Bharwa Baigan.
Brinjal - 400 grams or 6 in number

Unripe Grated coconut - ¼ cup
Coriander - 2 to 3 tbsp
Oil - 1/4 cup
Finely chopped green chilli - 2
Dhania powder - 1 ½ tbsp
Salt - ¾ tsp or according to taste
Red pepper - ¼ tsp
Asafoetida (Heeng) - 1 to 2 pinch
Cumin (Zeera) - ½ tsp
Fenugreek seeds (Methi) - ½ tsp
Rye - ½ tsp
Turmeric Powder - ½ tsp
Amchoor Powder - ½ tsp
Grated coconut - A piece of 1 inch
Anardana - 1 tsp
White sesame seeds (Til) - 1 tsp
Urad dal - 1 tsp
Channa Dal - 1 tsp
Let us first roast all the spices to prepare Nariyal Wale Bharwa Baigan.
Heat the pan now.
Take gram seeds and Urad Dal in the pan and roast it.
Keep the pan in mid-flame while roasting these things.
Now add Zeera, Methi dana, rye and Til.
Roast it by constantly stirring it.
All the things have turned brown and we will turn off the gas now.
It took 6 to 7 minutes to roast these spices.
Take all the spices in a plate.
Cool these and grind these.
Also add salt, turmeric powder and dhania powder in it.
We are adding these spices to increase the quantity of roasted spices.
The spices are ready after grinding.
Nice aroma is coming from the spices.
Also, mix the rest of the spices in it.
Add Heeng powder, lal mirch powder, Amchoor powder or pulp of tamarind, Anar Dana,
ginger or paste of ginger, green chilli, grated coconut and coriander in it.
Mix everything nicely.
The filling is now ready.
Now, we will fill the brinjals.
Take out the upper edge of the brinjal.
We can cut brinjal in two ways.
It can be cut lengthwise in cross-section or we can make two cuts horizontally in length.
Here, we have made two cuts horizontally and we are filling spices in it.
The filled brinjal is now ready.
Fill all the brinjals similarly.
Heat the pan to cook these.
Pan is now heated.
Take oil in the pan.
Put brinjals in it once the oil is heated.
Spread the remaining spices over the brinjals.
Cover it with the lid and cook the brinjals in mid flame for 5 minutes.
Turn the sides of the brinjal carefully since the lower surface of brinjal is now cooked.
Cook it over mid flame for five more minutes.
Now, we will check it.
Press the brinjals lightly to check whether they cooked or cooked.
Brinjals are now ready.
Take these out in a tray.
The stuffed Nariyal Baigan are now ready.
Nariyal wale Bharwa Baigan can be served with Chapati, Parantha or Rice.
