How to make Tomato Soup شوربة البندورة

Hi and welcomeback to najatskitchen
Today,I will be making Tomato Soup
We will need:
900 grams fresh ripe tomatoes (mix of fresh cherry, vine and plum tomatoes)
3 cloves garlic, peeled
2 small yellow onions, sliced
3 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
3 cups chicken stock
1 bay leaf
2 tablespoons butter
10-12 leaves chopped fresh basil leaves
2 tablespoons heavy cream, optional
Preheat oven to 425 degrees F.
Wash, and cut the tomatoes into halves.
Spread the tomatoes, garlic cloves and onions onto a baking tray.
Drizzle with olive oil and season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
Roast for 20 to 30 minutes, or until caramelized.
Add the chicken stock to a large stock pot, add the bay leaf, and bring to a boil
Remove roasted tomatoes, garlic and onion from the oven and transfer to the pot
Wash and dry basil leaves, and add to the pot.
Reduce heat and simmer for 15 to 20 minutes
Add the butter and a pinch of sugar
Use an immersion blender to puree the soup until smooth.
Strain the soup (optional)
Return soup to low heat, add cream and adjust Seasoning to taste with salt and freshly ground black pepper.
