Cauliflower can be used to prepare numerous kinds of dishes eg: Gobhi Aloo, Gobhi Matar, Gobhi ki Bhujiya etc.
Today we will prepare Gobhi Masala.
Ingredients required:
Cauliflower - 500 grams (separated into florets and washed twice with water)
Tomatoes - 4
Green chilly - 1
Ginger - 1" long piece
Cream - 1/2 cup
Curd - 1/4 cup
Corn flour - 2 tbsp
Green coriander - 2 tbsp (finely chopped)
Heeng (asafoetida) - 1 to 2 pinch
Black pepper powder - 1/4 tsp
Red chilly powder - less than 1/4 tsp
Garam masala - 1/4 tsp
Salt - 1 tsp or add to taste
Coriander powder - 1 tsp
Turmeric powder - 1/4 tsp
Jeera (cumin seeds) - 1/2 tsp
Oil - to fry cauliflower and to make the dish
Firstly we will marinate cauliflower to make Gobhi Masala.
Take curd and pour it in a big bowl.
Add black pepper, 1/4 tsp salt, corn flour and mix all of the ingredients thoroughly.
Now put the cauliflower pieces in the bowl and mix properly.
Cauliflower is now well mixed in curd, keep it aside for 15-20 minutes.
Until the cauliflower marinates let us grind the spices required for this dish.
Cut green chilly into 2 pieces and put in the mixer followed by tomatoes, ginger cut into big pieces.
Now grind the spices to make a fine paste.
Oil is heated and the cauliflower has also marinated.
So let us fry the pieces of cauliflower then take them out.
The cauliflower has turned light brown and should be removed from the pan.
We are done frying the cauliflower so let us begin preparing Gobhi Masala.
Pour 2 tbsp oil in a pan. Once the oil is heated put Heeng and Jeera.
After the Jeera is roasted add turmeric powder and coriander powder.
Fry the spices a little bit.
Now add the tomato-ginger-green chilly paste along with red chilly powder.
Fry the spices till oil surfaces.
We have fried the spices for 5 minutes and the oil is visible over the spices.
Now put in the cream and curd (remaining after it was used for marinating).
We will fry the spices again till they look greasy and oil floats over them.
The spices are fried and prepared as the oil has separated from them.
Now add Garam Masala and salt to the spices. Mix well.
Also add half of the green coriander and cauliflower.
As you mix the ingredients thoroughly, fry cauliflower for 2 minutes.
This dish has to made with Tari.
So add 1 cup water, cover the dish and allow it to cook on a low flame for 4-5 minutes.
This has to be done to ensure that all of the spices are absorbed by the cauliflower.
5 minutes are over and the dish is ready, transfer it into a bowl.
Sprinkle green coriander on the dish as garnish.
Gobhi Masala is ready, it has become very tasty and is very easy to make.
Just keep in mind :
Do not take out the cauliflower as soon as it is washed.
Soak it in water for 30 minutes before hand and place in a strainer.
Doing so will dry up all of the cauliflower's water.
Cauliflower contains water which takes time to dry up and water also pops in water.
Remember these details and cauliflower will get fried instantly in oil.
The quantity of the dish is sufficient for 4 family members.
Serve Gobhi Masala with parathas, roti, naan or rice.
