Raw Mango Launji recipe- Kairi ki Launji recipe

Today, we will prepare Kache Aam ki Lonji.
It is prepared in Rajasthan and Uttar Pradesh.
Let us see what are ingredients we require to prepare this.
Raw mangoes - 2.
Sugar - ¼ cup.
Oil - 1 to 2 tbsp.
Turmeric (Haldi powder) - less than ¼ tsp.
Fennel (Saunf) - ¼ tsp.
Cumin (zeera) - ¼ tsp.
Asafoetida(Heeng) - 1 to 2 pinches.
Salt - 1 tsp.
Black salt - ¼ tsp.
Garam Masala - ¼ tsp.
Red Pepper - 2 pinches.
First of all, we will peel the raw mangoes to prepare it.
Take out the pulp from the mangoes and cut it into pieces.
Make small pieces of the big pieces.
Turn on the burner.
Add oil in the heated pan.
Add Heeng and Zeera in oil.
Now add Saunf and Haldi powder and roast it till it turns light brown.
Fry the pieces of Mango in it.
Also add common salt, black salt and red pepper in it.
Fry it by mixing all the spices.
Add half cup water in it.
Cover it with a lid and let it cook for 3 to 4 minutes.
The pieces of mango have turned soft now.
Add sugar in it and mix it.
Also, add Garam Masala in it.
Cook the Lonji for some time without a lid on it till it turns thick.
After adding sugar we have cooked it for 5 more minutes.
Turn off the gas now.
The sweet and sour Lonji of mango is ready.
If you prefer jaggery, then you can also add jaggery in it.
Lonji can be eaten with any meal like lunch or dinner.
You can eat this with Poori or Parantha in breakfast.
Children also prefer this with Poori or Parantha.
